hallo – it’s jinnet…. while you’re waiting lets make a greek coffee… some greek coffee (if you’re in london try the greek grocers, just off the bayswater road) brikki (or very small milkpan) two tiny cups sugar everyone will tell you different, ralou says pour two cups of water into the brikki, add teaspoon sugar or to taste, add two heaped teaspoon of coffee – stir 51 times, bring close to the boil – but do not boil, put 3 drops of cold water into coffee, bring again nearly to boil and then pour slowly into cups, alternating… making sure that both get their share of froufrou… without the layer of tiny bubbles on the top its not cricket… enjoy
